Introduction
A light, refreshing dish – perfect as a palate cleanser before moving on to the next round. Use your favourite type of melon – watermelon works well, but cantaloupe or galia are just as nice.
Ingredients
small watermelon, quartered and cut into 1½cm slices | |
feta | |
cucumber, halved and thinly sliced | |
olive oil, for brushing | |
For the dressing: | |
olive oil | |
lemon, juice only | |
fresh mint, roughly chopped | |
fennel seeds (optional) |
