banana shallots, peeled and halved
vegetable oil
bay leaf
ground cumin
ground coriander
ground turmeric
freshly ground black pepper
brown lentils, rinsed well
boiling water
ginger, grated
garlic, crushed
sea salt
coconut milk/single cream
lime, juice only
To serve:
pomegranate, seeds only
fresh coriander, roughly chopped
toasted cashews
